What is the theme music and why isn't it featured here?

The theme and interstitial is the opening motif of the final movement (Madrigal nocturne) of Darius Milhaud's La Cheminée du roi René (1939) for wind quintet. It is not included in these listings simply because it is a fragment of a movement and its frequency (three times a night!) skews the rankings.

If you've never heard the complete work, you can find performances on YouTube.
